An Approach of Kitchen as a Social Laboratory along with Viviana Varese
The Michelin-starred Chef, has involved herself in two extensive projects for the new year. Constantly giving back to the community, her love for her profession and commitment to social issues are the main reasons in the realization of the plan.
Becoming an activist for the LGBTQ+ community, and a supporter of social inclusion, Viviana Varese has been fighting to affirm the role of women working within the hospitality industry. A testament to her commitment is the recent recognition given to her by “Champions of Change”, the new initiative of 50 Best — an international organization that awards prizes to the 50 best restaurants in the world — which in 2021 has chosen her as one of the three “unsung heroes” in the restaurant world, who drive positive change within their own communities.Through the appreciation, Io Sono Viva, Dolci e Gelati was born. The contemporary artisanal gelato and pastry shop was inaugurated on Monday, January 31, inside the Mercato Comunale Isola in Piazzale Lagosta 7 in Milan. The advancement of the project brings a hymn to joy, enthusiasm and sharing with others.
Bringing women on board, the 24 sqm space formed a collaboration with CADMI — Casa di Accoglienza delle Donne Maltrattate di Milano. Becoming the first anti-violence center opened in Italy 36 years ago and represents the point of reference for women who have experienced violence, be it physical, psychological, sexual, economic or stalking. This aims to restore economic independence in every ice cream is sold, an amount of €1.00 will be donated to CADMI to support the ongoing project.
For future plans, Viviana Varese is expected to open another gelateria that follows the same concept in Via Kramer in March. Portraying the inclusiveness and social integration of women at work, the W Villadorata Country Restaurant will also be reopened on the 15th of April. Always respecting its ingredients with a focus on biodiversity and gastronomic experience.
